  • 200grams butter
  • 50grams light brown sugar
  • 3 large pears, peeled, cored and halved lengthways
  • 250grams golden caster sugar
  • 3 eggs
  • 1teaspoons almond extract
  • 200grams plain flour
  • 1 1/2teaspoons baking powder
  • 2teaspoons cinnamon
  • 50grams ground almonds
  • 3tablespoons milk

Description

The slow cooker does all the hard work to make this pear and almond cake perfectly every time.

Method

Step 1 of 4

Grease the slow cooker basin with a little butter, add a layer of foil and grease it. Dot the foil with 50g of butter and scatter with light brown sugar. Arrange the pears cut side down on the foil.

Step 2 of 4

Beat the rest of the butter and caster sugar until pale and fluffy in a stand mixer. Add the eggs one at a time, beating after each addition, add almond extract and beat to combine.

Step 3 of 4

Gently mix in the flour, baking powder, cinnamon and ground almonds, then fold in the milk. Smooth the mix over the pears with a spatula.

Step 4 of 4

Add a piece of parchment paper to the slow cooker (without touching the batter) and place the lid on to secure. Cook on low for 3 hours. Turn off the heat and leave to sit for 30 minutes before turning out on to a serving plate.
