- 800grams skinless chicken thigh cutlets, fat trimmed
- 1tablespoons Italian herb mix
- 2 cloves garlic, crushed
- 2tablespoons extra virgin olive oil
- 2 lemons, 1 zested, 2 juiced
- 2 chicken stock cubes, crumbled
- 1/2 cup light cooking cream
- 1tablespoons cornflour
- 300grams broccoli, cut into small florets
- 200grams green beans, timmed
- 200grams frozen mashed potato, warmed (to serve)
Description
Put your slow cooker to work and whip up this delicious lemon chicken recipe in 4 easy steps. Mash and steamed greens make it a meal to remember.
Method
Step 1 of 4
Place chicken, herb mix, garlic and oil in a medium bowl. Season. Turn to coat.
Step 2 of 4
Heat a large frying pan over medium-high heat. Cook chicken for 3 minutes on each side or until browned. Transfer to a 5.5L slow cooker.
Step 3 of 4
Add zest, lemon juice, stock cubes and 1/2 cup cold water to slow cooker. Cover and cook on low for 3 hours or until chicken is cooked through. Skim off excess fat. Whisk cream and cornflour together in a small bowl. Add to slow cooker and cook, covered, for 1 hour or until sauce has thickened slightly.
Step 4 of 4
Cook broccoli and beans in a medium saucepan of boiling water for 2 minutes or until tender. Drain. Serve chicken and sauce with vegetables and mashed potato seasoned with pepper.
