- 3tablespoons olive oil
- 450grams sweet potato, peeled, cut into small cubes
- 400grams cooked rice
- 80grams black beans, drained
- 80grams canned corn, drained
- 60grams ranch dressing
- 250grams chunky salsa
- 250grams cheese, shredded, you may use cheddar or non-dairy cheese
Description
An easy and healthy vegetarian skillet bake that you can upgrade with your favorite burrito toppings.
Instruction tip
You may serve it with other burrito toppings: sour cream, chopped tomatoes, chopped cilantro, sliced red onions, sliced avocado or guacamole.
Method
Step 1 of 3
Preheat the oven to 190°C/170°C fan-forced.
Step 2 of 3
Heat the cast iron skillet to medium high heat. Add the oil and saute the diced sweet potatoes until cooked for about 10 minutes.
Step 3 of 3
Take off heat. Stir in rice, beans, corn, ranch and salsa and mix well. Top with cheese and bake for another 12-15 minutes or until the cheese is melted and golden.
