- 1 onion, peeled and diced
- 250grams mushrooms, finely sliced
- 2tablespoons tomato paste
- 1teaspoons red pepper flakes
- 350grams rotini
- 1L vegetable stock
- 800grams crushed tomatoes
- 70grams kale, finely chopped

Description
A hearty, tomato-based vegan pasta cooked in one pot to save on washing up.
Method
Step 1 of 3
In a large pot over medium heat, add olive oil and saute the onions until translucent. Add the mushrooms until soft. Then, add the tomato paste and red pepper flakes and mix thoroughly.
Step 2 of 3
Tip in the rotini, vegetable stock and crushed tomatoes. Simmer for 15 minutes, stirring constantly.
Step 3 of 3
Once the pasta is cooked, stir in the chopped kale. Turn off the heat and allow to sit for 3-5 minutes. You may serve it topped with your favorite vegan cheese.
