Description
This creamy, healthy and vegetarian friendly paneer curry can be whipped up in a jiffy.
Method
Step 1 of 3
Cut the tofu into cubes. Soak them in hot salted water for a few minutes.
Step 2 of 3
Heat the coconut milk in a small pan. Whisk in the curry paste, pumpkin puree, curry powder, sugar, salt and tomato paste. Allow the sauce to simmer.
Step 3 of 3
Drain the tofu then add it to the sauce. Simmer for about 3-5 minutes. You may serve it topped with coconut cream, chopped cilantro and warm naan.
