- 400grams paneer, chopped into cubes
- 4 cloves garlic, peeled and minced
- 5centimeters ginger, peeled and chopped
- 1 large red onion, peeled and sliced
- 1 medium green chilli, diced
- 300grams spinach, finely chopped
- 1teaspoons garam masala
- 2teaspoons fenugreek powder
- 100grams kale, destalked and finely chopped
- 100grams silverbeet, destalked and finely chopped
- 1/2 cup coconut milk

Description
Saag paneer is a great dish for packing in lots of different greens, no one will know and the end result is nutritious and delicious.
Method
Step 1 of 4
Heat 2 tablespoons of ghee in a large pan on medium heat and cook the turmeric for 30 seconds. Add the paneer and cook for 6-8 minutes, tossing, until golden. Remove with a slotted spoon and set aside.
Step 2 of 4
Blitz the garlic, ginger, onion and chilli in blender. Heat the rest of the ghee in the same pan as before and cook the onion mix for 10 minutes. Meanwhile, place the spinach in a colander and pour over boiling water to wilt. Drain well.
Step 3 of 4
Add the garam masala and fenugreek powder to the pan, adding a little water if necessary, and cook for 2 minutes. Add the kale and silverbeet and cook for 2 minutes, stir in the spinach and coconut milk and cook for 2 minutes.
Step 4 of 4
Add the paneer back into the pan and cook for 2 minutes before serving. Serve with lemon wedges to squeeze over, if desired.
