  • 3tablespoons canola oil
  • 1 large onion, peeled and sliced
  • 3 cloves garlic, peeled and minced
  • 5centimeters ginger, peeled and grated
  • 4tablespoons Indian curry paste
  • 1tablespoons tamarind paste
  • 200grams red lentils, dried
  • 400grams cauliflower florets
  • 1L vegetable stock, made with 2 stock cubes
  • 1 2/3 cup coconut milk, tin, reduced fat

Description

Red lentils make this rich cauliflower curry hearty and filling. serve with rice and naan for a perfect Indian veggie feast.

Method

Step 1 of 2

Heat the oil in a large pan on medium high heat and cook the onions, garlic and ginger for 10 minutes. Stir in the curry and tamarind pastes and cook for 1 minute.

Step 2 of 2

Tip the lentils into the pan and pour over the vegetable stock. Simmer for 15 minutes, tip in the cauliflower and coconut milk and cook for 10-12 more minutes, until the lentils and cauliflower are soft.
