- 2tablespoons canola oil
- 1 large onion, peeled and diced
- 5centimeters ginger, peeled and grated
- 3 cloves garlic, peeled and minced
- 2teaspoons garam masala
- 2teaspoons turmeric powder
- 700grams cauliflower florets
- 1 lime, juiced
- 2 cups vegetable stock, made with 1 stock cube
- 250grams red lentils, dried
- 1 2/3 cup coconut milk, reduced fat
- 150grams spinach, destalked and chopped
Description
Vibrant turmeric makes this dahl extra colourful, filling and delicious with plenty of veggies.
Method
Step 1 of 3
Heat the oil in a large pan on medium heat and cook the onions for 6-7 minutes. Add the garlic, ginger and cook for 3 minutes. Tip in the cauliflower and spices and stir to coat. Cook for 2 minutes.
Step 2 of 3
Add the lentils and stir to coat. Pour over the coconut milk and stock and bring to the boil. Reduce the heat and simmer for 30 minutes, stirring and adding more water if necessary, until the lentils are cooked and the cauliflower is tender.
Step 3 of 3
Stir in the spinach and lime juice cook for 2 minutes, until wilted.
