- 125grams green lentils
- 2tablespoons curry powder
- 150grams green beans, chopped
- 400grams cauliflower florets
- 1/3 cup coriander leaves, roughly chopped
- 1 onion, chopped
- 2 sweet potatoes, peeled, cut into chunks
- 1teaspoons chilli flakes
- 2teaspoons ground cumin
- 2 cup vegetable stock
- 400grams can diced tomatoes
- 2tablespoons vegetable oil
- 2 cups brown rice, steamed (to serve)
- 2 cups natural yoghurt (to serve)
Method
Step 1 of 3
Heat oil in a large frying pan. Add onion and cook for 3 minutes or until softened. Add curry powder, cumin and chilli flakes and cook for a further 1 minute.
Step 2 of 3
Stir in lentils, sweet potato, cauliflower, stock and tomatoes. Bring to the boil, then cover and reduce heat to low. Simmer for 20 minutes or until lentils and vegetables are tender. Add beans and simmer for 5 minutes.
Step 3 of 3
Stir through coriander, reserving some for garnish. Serve with steamed brown rice and yoghurt on the side.
