- 2tablespoons vegetable oil
- 1 onion, coarsely chopped
- 2centimeters fresh ginger root, peeled and grated
- 1 fresh long green chilli, deseeded and finely chopped (optional)
- 1teaspoons ground cumin
- 1/2teaspoons ground coriander
- 1teaspoons ground turmeric
- 2teaspoons garam masala
- 1 can coconut milk
- 3 cups water (or more if needed)
- 1 small eggplant, cut into 2 cm chunks
- 2 medium carrots, peeled and cut into 2 cm chunks
- 2 medium zucchini, cut into 2 cm chunks
- 1/4 small butternut pumpkin, peeled and cut into 2 cm cubes
- 1/2 punnet cherry tomatoes, halved
- 1/2 small cauliflower, in florets (and the small leaves)
- 400grams lentils
- salt and pepper (to taste)
- 3tablespoons fresh coriander, coarsely chopped
Description
Gently spiced and nourishing, this dish is just right for weeknight dinners with leftovers for lunches.
Method
Step 1 of 7
In a large heavy-based pan, heat the oil on medium before adding the chopped onion, grated ginger and chopped chilli if using. Cook, stirring, until softened but not browned.
Step 2 of 7
Add the spices, (but not the garam masala yet) and stir to coat in the oil until it becomes aromatic.
Step 3 of 7
Add coconut milk and 3 cups of water, then add vegetables in order of the ingredient list, so that the firmer ones get a little longer to cook if you're chopping as you go.

Lastly add the drained tin of lentils, which will mash somewhat into the curry and thicken it slightly as it cooks.

Stir once all the vegetables are added and now decide if you'd like more sauce - add a further 2 or 3 cups of water (I like enough liquid to just cover the vegetables), bring to a gentle simmer and cook without covering for 30 minutes or until vegetables are cooked to your liking.

Add salt and pepper to taste, add garam masala.

Garnish with coarsely chopped coriander, serve hot in a shallow bowl with flat bread or rice.
