- 1 large onion, diced
- 1 large capsicum, diced
- 1 cup celery, diced
- 1 zucchini, diced
- 3tablespoons chili powder
- 285grams potatoes
- 1 madras lentil pouch
- 3 tomatoes, diced
- 1 cup vegetable broth
- 1 cup cheddar cheese (optional)
- 1 cup sour cream (optional)

Method
Step 1 of 5
Heat olive oil on medium heat in sauce pan.
Step 2 of 5
Pour onion, capsicum, celery and zucchini in pan.
Step 3 of 5
Sauté for 8 minutes or until onions are translucent.
Step 4 of 5
Add chili powder, potatoes, madras lentils, tomatoes and vegetable broth and simmer for 10 minutes.
Step 5 of 5
Top, as desired, with cheese and sour cream. Enjoy.
