- 2tablespoons canola oil
- 1 large onion, peeled and sliced
- 2 large capsicums, red and green, diced
- 3 cloves garlic, peeled and minced
- 5centimeters ginger, peeled and grated
- 1 medium red chilli, diced
- 2teaspoons cumin
- 2teaspoons turmeric powder
- 1/2 bunch coriander, fresh, chopped, stalks included
- 500grams puy lentils, ready cooked
- 1 2/3 cup coconut milk, reduced fat
- 2 limes, 1 juiced, 1 chopped into wedges
Description
Using ready-cooked puy lentil pouches makes this dahl as speedy as it is delicious.
Method
Step 1 of 3
Heat the oil in a large pan on medium heat and cook the onions for 6-7 minutes. Stir in the capsicums and cook for 3 minutes.
Step 2 of 3
Add the garlic, ginger, chilli and spices and cook for 2 minutes. Tip in the coriander stalks, coconut milk , lime juice and lentils and cook for 3-4 minutes.
Step 3 of 3
Serve with chopped coriander on top.
