- 1 medium green chilli, diced
- 500grams spinach, finely chopped
- 1teaspoons garam masala
- 1/2 cup coconut milk
- 1 medium lemon, juiced

Description
Rich saag paneer is hard to beat, it is a great addition to any Indian feast and very simple to make.
Method
Step 1 of 4
Heat 2 tablespoons of ghee in a large pan on medium heat and cook the turmeric and chilli powder for 30 seconds. Add the paneer and cook for 6-8 minutes, tossing, until golden. Remove with a slotted spoon and set aside.
Step 2 of 4
Blitz the garlic, ginger, onion and chilli in blender. Heat the rest of the ghee in the same pan as before and cook the onion mix for 10 minutes. Meanwhile, place the spinach in a colander and pour over boiling water to wilt. Drain well.
Step 3 of 4
Add the garam masala to the pan and stir to coat, adding a little water if necessary, and cook for 2 minutes. Add the spinach and stir in the coconut milk and cook for 2 minutes.
Step 4 of 4
Season with lemon juice, add the paneer back into the pan and cook for 2 minutes before serving.
