  • 2tablespoons canola oil
  • 400grams cauliflower florets
  • 2 medium onion, peeled and diced
  • 300grams potatoes, peeled and chopped into cubes
  • 4 cloves garlic, peeled and minced
  • 5centimeters ginger, peeled and chopped
  • 1teaspoons ground coriander
  • 2teaspoons cumin
  • 1/2teaspoons turmeric powder, dried, rinsed
  • 100grams spinach
  • 1 bunch coriander, fresh, chopped, stalks included
  • 1 medium lime, chopped into wedges

Description

Spiced potatoes, cauliflower and spinach work perfectly together in this easy aloo gobi, ideal as a side dish for an Indian feast.

Method

Step 1 of 4

Pre-heat the oven to 200°C. Boil the potatoes in a pot of water for 6-7 minutes. Remove with a slotted spoon and add the cauliflower. Cook for 3 minutes and drain well. Toss the potatoes and cauliflower in a bowl with a little oil.

Step 2 of 4

Spread the potatoes and cauliflower on a baking sheet and roast for 12 minutes. Heat the oil and cook the onions for 10 minutes. Add the garlic and ginger and cook for 2 minutes, stir in the spices and coriander stalks and cook for 2 minutes.

Step 3 of 4

Add the cauliflower and potatoes to the pan and stir to coat, adding a little water if necessary. Add the spinach and cook for 2 minutes, until wilted.

Step 4 of 4

Serve with the rest of the coriander on top and lime wedges on the side.
