  • 200grams red cabbage, shredded
  • 1/4 bunch coriander, sprigs picked

Description

A jumbo bread roll loaded with cabbage, carrot, chicken, mayonnaise and chilli sauce: what’s not to love? This easy dinner also makes a perfect leftover lunch the next day.

Method

Step 1 of 3

Place vinegar and sugar in a small bowl. Stir until sugar has dissolved. Add carrot and stir to coat. Set aside.

Step 2 of 3

Preheat oven to 230°C/210°C fan-forced. Line a large baking tray with baking paper. Arrange schnitzel on a baking tray. Bake for 20 minutes or until golden and cooked through, turning halfway through cooking and adding rolls to the oven in the last 5 minutes of cooking time.

Step 3 of 3

Combine mayonnaise and chilli sauce in a small bowl. Thickly slice schnitzel. Drain carrot. Fill rolls with cabbage, carrot and schnitzel. Drizzle with mayonnaise mixture and top with coriander. Serve.
