  • 1/2packets Steggles frozen crumbed chicken breast fingers
  • 1/2 cup whole egg mayonnaise
  • 2tablespoons sweet chilli sauce
  • 2 Lebanese cucumbers
  • 1/3 punnet dill
  • 2packets little gem combo, leaves separated
  • 150grams shredded carrot

Description

Crumbed chicken breast makes the perfect topping for crunchy lettuce cups. Top with shredded carrot, cucumber and dill for an easy budget-friendly family dinner.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Arrange chicken on prepared tray. Bake following packet instructions or until golden brown.

Meanwhile, whisk mayonnaise, sweet chilli sauce and 1 tbs of water in a jug until combined.

Step 3 of 4

Using a sharp knife, cut cucumber in half lengthways, then thinly slice into half moons.

Step 4 of 4

Pick sprigs from dill. Arrange lettuce on a platter. Top lettuce with carrot, cucumber and chicken. Drizzle with sweet chilli mixture. Sprinkle with dill. Serve.
