  • 1/3 cup Woolworths crunchy peanut butter
  • 420grams Edgell peas, corn & carrots, drained, rinsed
  • 2teaspoons extra virgin olive oil
  • 500grams Woolworths extra lean beef stir-fry
  • 1 Lebanese cucumber, thinly sliced

Description

This rich and flavourful satay beef dish will warm you up from the inside out.

Method

Step 1 of 4

Remove the condiment sachets from noodle packets. Pour 1 seasoning oil sachet into a medium saucepan over medium heat. Add peanut butter and ⅔ cup water. Whisk to combine. Add 4 sweet soy sauce sachets, 1 seasoning oil sachet and 1 chilli sauce sachet. Simmer for 3 minutes or until sauce thickens slightly. Season. Cover to keep warm.

Step 2 of 4

Cook noodles in a large saucepan of boiling water for 2-3 minutes or just until al dente. Drain and return noodles to saucepan. Add vegetable mix, 1 seasoning powder sachet and 2 remaining seasoning oil sachets. Toss to combine.

Step 3 of 4

Meanwhile, heat half of the oil in a large frying pan over medium-high heat. Add half of the beef and cook, stirring often, for 1-2 minutes or until cooked through and browned. Repeat with remaining oil and beef.

Step 4 of 4

Divide noodle mixture among serving bowls. Top with beef, sauce, cucumber and fried onion sachets. Serve with extra chilli sauce on the side, if desired.
