- 3teaspoons extra virgin olive oil
- 1 Woolworths free range egg, beaten
- 500grams Woolworths COOK chicken breast steaks with sweet soy BBQ
- 550grams Woolworths COOK stir-fry kit with honey soy sauce
- 450grams Woolworths microwave long-grain white rice
- 1 long red chilli, thinly sliced
Description
This speedy, flavour-packed chicken fried rice is perfect for a busy weeknight.
Method
Step 1 of 4
Heat 1 tsp oil in a large frying pan over medium-high heat. Add egg and swirl to coat base. Cook for 1 minute or until set. Transfer to a chopping board. Roll up and cover to keep warm.
Step 2 of 4
Heat half of the remaining oil in pan over medium heat. Add chicken and cook for 5 minutes each side or until cooked through. Transfer to a chopping board.
Step 3 of 4
Heat remaining oil in frying pan over medium-high heat. Add vegetables and stir-fry for 2 minutes. Add rice (no need to microwave) and stir-fry for 2 minutes, tossing to break up any lumps, or until heated through. Reserve 1 tbs sauce from stir-fry kit and set aside. Add remaining sauce to rice mixture and toss until well combined. Season with pepper.
Step 4 of 4
Thickly slice chicken. Thinly slice omelette. Divide rice among serving bowls. Top with chicken, egg and chilli. Drizzle with reserved sauce.
