- 1/2 cup custard powder
- 2 sheet frozen puff pastry, partially thawed
- 1 cup dark brown sugar
- 3/4 cup cornflour
- 1/3 cup thickened cream
- 200grams dark chocolate, roughly chopped
- 3 cup milk
- 40grams butter
- 2 eggs, yolks lightly beaten
- 1/2teaspoons sea salt flakes
- 300grams caramel-salted dessert sauce
- 2teaspoons vanilla extract

Method
Step 1 of 5
Preheat oven to 200°C. Grease and line a 22cm-square cake tin with baking paper. Line 2 trays with baking paper.

Place 1 sheet of pastry onto a tray and cover with baking paper. Place a second tray over for a weight. Bake for 10 minutes or until golden. Transfer pastry to a wire rack. Repeat with remaining pastry.

Meanwhile, combine sugar, cornflour and custard in a saucepan. Gradually whisk in milk until smooth. Add sauce and butter. Place over medium heat and whisk until smooth and bring to the boil. Cook for 3 minutes, stirring until very thick. Remove from heat. Stir in yolks, vanilla and salt. Cover surface with baking paper to prevent a skin forming. Cool.

Trim both pastry pieces to fit snuggly into the cake tin. Place one into base. Spoon cooled custard over, spreading evenly. Top with second pastry and press down firmly. Cover tin with plastic and chill for at least 2 hours to set.

Meanwhile, place chocolate and cream into a bowl over a saucepan of simmering water, taking care base of bowl does not touch water. Stir until melted and smooth. Cool. Pour over slice and leave to set. Cut into squares.
