- 1tablespoons Woolworths sesame seeds
- 5milliliter olive oil cooking spray
- 260grams salmon fillets, skin off
- 180grams dried soba noodles
- 200grams green beans, trimmed
- 1/4 red cabbage, finely shredded
- 1 carrot, shredded
- 1 red capsicum, deseeded, thinly sliced
- 2tablespoons Asian sesame, soy & ginger dressing
- 1 Calypso mango, peeled, deseeded, thinly sliced
Description
Fresh mango adds a hint of sweetness to this salmon and soba noodle salad. Make this nutritionally approved recipe for a tasty dinner the family will love.
Instruction tip
Tip:To cut back on the prep time, replace the cabbage and carrot with a 300g pkt Woolworths fine cut coleslaw.
Method
Step 1 of 4
Heat a medium frying pan over medium-low heat. Toast sesame seeds in pan, stirring, for 3 minutes or until golden. Transfer to a small bowl and set aside until ready to use.
Step 2 of 4
Spray same pan with oil and place over medium heat. Cook salmon for 3 minutes on each side or until just cooked through. Transfer to a plate
to cool slightly. Roughly flake.
Step 3 of 4
Meanwhile, cook noodles according to packet instructions, adding beans for the last minute of cooking. Drain. Refresh under cold water. Drain. Transfer to a large bowl. Add cabbage, carrot, capsicum, dressing and mango, then toss to combine.
Step 4 of 4
Serve salad topped with salmon and sprinkled with sesame seeds.
