  • 3 cloves garlic, thinly sliced

  • 225grams canned sliced water chestnuts, drained, finely chopped
  • 2 spring onions, thinly sliced
  • 2 baby cos lettuce, leaves separated
  • 2 carrots, cut into long strips
  • 1 long red chilli, thinly sliced
  • 1/2 bunch coriander leaves, leaves picked

Method

Step 1 of 4

Soak noodles in a large bowl of boiling water for 2 minutes or until soft. Drain and set aside.

Step 2 of 4

Combine cornflour and 1/4 cup water in a small bowl. Str in sauces and garlic.

Step 3 of 4

Heat oil in a large frying pan over medium heat. Cook mince for 5 minutes, breaking up lumps with a wooden spoon, or until browned. Add chestnuts, onion and sauce mixture. Cook, stirring, for a further 5 minutes or until sauce has thickened slightly.

Step 4 of 4

Arrange lettuce in bowls. Top with noodles, beef mixture, carrot, chilli and coriander. Serve.
