  • 1 pinch salt
  • 8 slices sourdough bread
  • 1 pinch freshly ground black pepper
  • 3tablespoons mayonnaise
  • 1teaspoons horseradish sauce
  • 25grams butter, softened (for spreading)
  • 2 handfuls watercress
  • 200grams rare roast beef, thinly sliced

Description

Sandwiches can be easily enlivened by flavouring some good, shop-bought mayonnaise.

Method

Step 1 of 3

Mix the mayonnaise and horseradish together and season well. Butter each slice of bread on one side only.

Step 2 of 3

Lay 4 of the buttered slices on a chopping board, buttered-sides up. Top each slice with a layer of the watercress, pressing it into the bread gently. Then layer one-quarter of the beef on each slice, and spread with a thin layer of the mayonnaise.

Step 3 of 3

Top with the final slice of bread, buttered-side down, and press down well to hold everything together. Cut into halves to serve, or pack into a container for transportation.
