  • 40grams unsalted butter, melted
  • 8 red plums, halved, pitted
  • 1/3 cup maple syrup
  • 1/3 cup brown sugar

Description

Give your pancakes a burst of colour and flavour with thinly sliced plums and a big scoop of ricotta. Perfect for weekend spoils, especially when paired with a flat white!

Method

Step 1 of 4

Combine flour, caster sugar, bicarbonate of soda and cinnamon in a bowl. In a jug, whisk ricotta, milk, egg and half of the butter and slowly add to flour mixture, whisking until smooth and well combined.

Step 2 of 4

Preheat grill on high. Line a baking tray with baking paper. Reserve 4 plum halves and arrange remainder on tray. Drizzle maple syrup over plums and sprinkle with brown sugar. Grill for 8 minutes or until softened and golden. Thinly slice reserved plums.

Step 3 of 4

Meanwhile, heat a non-stick frying pan over medium heat. Brush pan with a little remaining butter. Add 1/4 cup of pancake mixture, two scoops at a time, to pan and cook for 3 minutes or until bubbles form on the surface. Add 2 plum slices to each pancake, then turn and cook for 1-2 minutes or until cooked through. Repeat with remaining butter, pancake mixture and plum slices to make a total of 12 pancakes.

Serve pancakes with grilled plums and cooking liquid.
