  • 90grams unsalted butter, melted
  • 1tablespoons powdered gelatine
  • 500grams Philadelphia original cream cheese, softened
  • 1 cup pure icing sugar
  • 1 cup thickened cream, whipped
  • 2teaspoons red food colouring
  • 30grams blueberries
  • 30grams raspberries
  • 4 strawberries
  • 60grams Cadbury Flake bars, crumbled

Description

Make a Christmas dessert to remember with this eye-catching red velvet Oreo cheesecake recipe. Vibrant, creamy and delicious, it's full of festive cheer.

Method

Step 1 of 6

Grease and line a 23cm (6cm deep) round springform pan.

Step 2 of 6

Place cookies in a food processor and process until fine crumbs form. Add butter and process until combined. Using back of a metal spoon, press mixture over base of pan to compact. Refrigerate for 15 minutes to chill.

Step 3 of 6

Meanwhile, place 1/3 cup boiling water in a small heatproof bowl and sprinkle over gelatine. Stir until gelatine has dissolved. Set aside for 3 minutes to cool.

Step 4 of 6

Meanwhile, using an electric mixer, beat cream cheese on low speed for 2 minutes or until smooth. Add sugar and beat until combined. Fold in cream and food colouring until just combined. Fold gelatine mixture into cream cheese mixture.

Step 5 of 6

Pour cream cheese mixture over cookie base and smooth top. Cover and refrigerate for 4 hours or overnight, until set.

Step 6 of 6

Transfer cheesecake to a serving plate. Top with berries and Flake to decorate. Serve.
