  • 1tablespoons vegetable oil
  • 2tablespoons Thai red curry paste
  • 500grams country greens
  • 400milliliter canned light coconut milk
  • 1tablespoons salt-reduced soy sauce
  • 2teaspoons Woolworths pure honey
  • 400grams wok-ready ramen noodles
  • 1/2 punnet Thai basil, leaves picked
  • 2/3 cup roasted & unsalted cashews, roughly chopped
  • 1/4 cup fried shallots

Description

After a delicious, quick and easy vegetarian dinner? Try this budget-friendly Thai red curry stir fry with ramen noodles, greens and crispy fried shallots.

Method

Step 1 of 2

Heat oil and paste in a wok or large frying pan over medium-high heat. Stir-fry for 1 minute or until fragrant. Add frozen vegetables, then stir to coat. Add milk, soy and honey, then bring to the boil. Add noodles, then stir-fry for 5 minutes or until heated through and tender.

Step 2 of 2

Stir in half each of the basil and cashews. Serve ramen mixture topped with shallots, and remaining basil and cashews.
