- 150grams unsalted butter, softened
- 200grams white chocolate chips
- 3 large eggs
- 200grams granulated sugar
- 140grams all purpose flour
- 2tablespoons cocoa powder
- 2teaspoons baking powder
- 300grams raspberries
Description
Raspberry & white chocolate brownies are gooey and moist with a crispy crust that is irresistible.
Method
Step 1 of 3
Preheat the oven to 180°C. Line a 12cm X 20cm X 3.5cm baking dish with parchment paper setting it aside. Added the butter and chocolate together in a bowl, melt in the microwave or over a pot of boiling water. Once melted whisk the butter and chocolate together setting it aside to cool.
Step 2 of 3
Whip the eggs and sugar together using a stand or hand mixer for 3 minutes until light and fluffy. Sift the flour, cocoa and baking powder together over a bowl. Gently fold the melted chocolate and butter together with the whipped eggs and sugar using a spatula. Fold in the flour mixture before folding in the raspberries.
Step 3 of 3
Spread the batter out into the lined baking dish, bake in the oven for 30 minutes until a toothpick comes out clean when inserted in the center of brownies. Let the brownies cool in the dish before cutting into squares.
