  • 3/4 cup milk, warmed
  • 7grams dried yeast
  • 2/3 cup Woolworths caster sugar
  • 4 cups plain flour
  • 3 free range eggs
  • 1teaspoons sea salt flakes
  • 250grams unsalted butter, cubed, softened
  • 1 cup blueberry jam
  • 1 cup icing sugar
  • 2tablespoons lemon juice

Description

Unleash layers of flavour with this naturally sweet braided bread, peppered with fresh blueberries and topped with an icing drizzle.

Method

Step 1 of 4

To make dough, combine milk, yeast and sugar in a small bowl. Stand for 10 minutes. Place milk mixture, flour, eggs and salt in the bowl of a stand mixer. Using a dough hook, knead mixture for 3 minutes or until combined. Add butter, one piece at a time, and knead for 5 minutes or until combined.

Step 2 of 4

Place dough in a clean bowl. Cover and rest for 1 hour or until almost doubled in size. Preheat oven to 180°C/160°C fan-forced and line a 13x24cm (7cm deep) loaf pan with baking paper.

Roll dough on a floured surface until 30x45cm in size. Spread with jam, leaving a 2cm border. Roll up tightly from short edge. Cut log in half lengthways, then twist together to make 1 log.

Step 4 of 4

Place log in pan and bake for 45 minutes or until golden, covering with foil if bread begins to brown too much during baking. Stand until cool enough to handle, then remove from pan. Combine icing sugar and juice in a bowl until a smooth icing forms. Serve babka drizzled with lemon icing.
