  • 2tablespoons ras el hanout, divided
  • 1 medium lemon, zest and juice
  • 1 medium red onion, peeled and chopped
  • 400grams cauliflower florets
  • 400grams chickpeas, canned, drained
  • 1/4 bunch coriander, fresh, chopped
  • 4tablespoons Greek style yoghurt

Description

This middle eastern inspired salmon is lightly spiced and delicious with a drizzle of yoghurt.

Method

Step 1 of 3

Preheat the oven to 200°C/180°C fan-forced. Brush the salmon fillets with half of the oil and coat with half of the ras el hanout. Tip the cauliflower, red onion, chickpeas into a large bowl, add the remaining oil, ras el hanout and lemon juice and toss to coat.

Step 2 of 3

Spread the cauliflower, chickpeas and red onion on a baking tray and roast for 20 minutes. Remove the baking tray from the oven and add the salmon fillets. Roast for 15 minutes until the salmon is cooked through.

Step 3 of 3

Mix the yoghurt, chopped coriander and lemon zest in a small bowl. Serve the salmon with roasted cauliflower, onions and chickpeas, a drizzle of yoghurt sauce and extra chopped coriander on top.
