- 2 medium onions, peeled and chopped
- 2 medium carrots, peeled and chopped
- 2teaspoons thyme, fresh, chopped
- 1 large lemon
- 1tablespoons olive oil
- 1 cloves garlic, peeled and minced
- 500grams puy lentils, ready cooked
- 3/4 cup vegetable stock
- 400grams kale, destalked and choppedingredient tip
- 4 medium salmon fillets, skinless
- 3tablespoons parsley, fresh, chopped
- 1 pinch cracked black pepper
Description
This traybake has everything you need for a satisfying and healthy meal in one pan.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Add the onions, carrots, thyme and oil to a large roasted tray, stir to coat and roast for 10 minutes. Add the garlic, lemon zest, stock and lentils and return to the oven for 5 minutes.
Step 2 of 3
Stir in the chopped kale and top with the salmon fillets. Season with cracked black pepper and roast for 12-15 minutes until the salmon is just cooked.
Step 3 of 3
Divide between 4 plates and serve with a squeeze of lemon juice and chopped parsley on top.
