  • 1 1/2tablespoons plain flour
  • 3/4 cup sparkling apple juice
  • 25grams butter
  • steamed green beans (to serve)
  • 5 small apples
  • 2 chicken breast fillets (halved crossways)
  • 2tablespoons extra virgin olive oil
  • 3/4 cup salt-reduced chicken stock
  • sweet potato mash (to serve)
  • 8-12 fresh sage leaves
  • 1tablespoons fresh rosemary
  • 2 garlic cloves (crushed)
  • 4 slices prosciutto

Method

Step 1 of 5

Preheat oven to 220°C. Line a baking tray with baking paper.

Thinly slice in rounds and core 2 apples. Core and cut remaining apples into wedges.

Place chicken fillets on a board. Sprinkle with rosemary and season with pepper. Top evenly with apple slices. Wrap each fillet with a prosciutto slice to secure apple.

Heat oil in a large frying pan over medium-high heat. Add chicken fillets, apple-side down, and apple wedges, and cook for 3-4 minutes or until golden. Transfer to tray, turning chicken and apple over. Scatter over sage. Bake for 15 minutes or until chicken is cooked through and apples are tender.

Meanwhile, melt butter in same frying pan over medium heat. Add garlic and cook, stirring, for 1 minute or until fragrant. Add flour and stir to combine. Gradually add juice and stock, stirring constantly, until smooth and combined. Bring to the boil and cook for 2-3 minutes or until sauce thickens slightly. Serve chicken with apple wedges, green beans, sweet potato mash and apple sauce.
