  • 6 slice thick bread
  • 2teaspoons sesame oil
  • 1 red chilli, chopped
  • 2tablespoons coriander , chopped roots, stems, and leaves
  • 2teaspoons ginger, grated
  • 3 spring onions, finely chopped
  • 1/2 cup sweet chilli sauce (to serve)
  • 1/2 cup sesame seeds
  • 1tablespoons soy sauce
  • 1 egg white
  • 500milliliter vegetable oil

Method

Step 1 of 3

Thaw prawn meat and place in a food processor. Add spring onions, coriander (roots, stems and leaves), ginger, sauce, sesame oil, red chilli (optional) and egg white. Process in short bursts until mixture is finely chopped.

Step 2 of 3

Trim crusts from bread. Spread with the prawn paste. Place sesame seeds (or crushed rice vermicelli noodles) on a plate. Press the bread, prawn-side down, into the seeds or noodles to coat. Cut into quarters.

Step 3 of 3

Add enough vegetable oil to a wok or frying pan to reach a depth of 6cm. Heat over medium heat (to test when oil is ready, a cube of bread will turn golden brown in 15 seconds). Carefully place a few toasts into the oil, prawn-side down, and cook for 1 minute. Turn over and cook for 30 seconds or until golden. Drain on paper towel. Serve with soy sauce or sweet chilli sauce.
