- 1 large cauliflower, chopped
- 2tablespoons canola oil
- 4 medium spring onions, divided, sliced
- 1 medium red chilli, sliced
- 2 cloves garlic, peeled and minced
- 5centimeters ginger, peeled and grated
- 300grams mixed stir-fry vegetables
- 150grams frozen peas
- 200grams prawns, peeled, cooked
- 3 large eggs
- 2tablespoons soy sauce
- 1tablespoons toasted sesame oil
Description
Cauliflower makes this prawn fried rice dish deliciously nutty.
Method
Step 1 of 5
Place the chopped cauliflower in a food processor and pulse until finely chopped to resemble rice. Set aside.
Step 2 of 5
In a large wok over a medium high heat, heat the oil and add half the spring onions, garlic and ginger and cook for 30 seconds, add the mixed vegetables and peas and cook for 3 minutes.

Add the cauliflower rice and prawns to the pan and cook for 2 minutes to heat through.
Step 4 of 5
Whisk the eggs and sesame oil in a large bowl, make a well in the middle of the wok and pour into the stir fry, cooking for 1 minute before stirring through to coat the rice.
Step 5 of 5
Add the soy sauce and stir through then top with the remaining spring onion slices to serve.
