- 2teaspoons horseradish
- 4 white fish fillets
- 1 avocado
- 1 lemon, 2 tbs juiced
- 1/4 cup Greek yoghurt
- 1 pinch black pepper (to season)
- 1tablespoons olive oil
- 2tablespoons chives, chopped
- 80grams baby kale
- 1 pinch pink salt ground (to taste)
Method
Step 1 of 2
Process flesh of an avocado, Greek yoghurt, lemon juice and horseradish in a food processor until smooth. Season with salt and pepper. Transfer to a bowl and stir in chopped chives. Set aside.
Step 2 of 2
Heat olive oil in a frying pan over medium-high heat. Cook 4 white fish fillets for 5 minutes each side. Add baby kale, cover and cook until wilted. Serve fish and kale with the avocado sauce.
