Pork Scaloppini with Mushrooms

- 2 thin lean WW pork fillets (approx 170g)
- 1 pinch salt (to taste)
- 1 pinch pepper (to taste)
- 1teaspoons plain flour
- 75grams small button mushrooms, halved
- 1teaspoons fresh oregano, chopped
- 1/2teaspoons fresh thyme leaves
- 1/4 cup WW light cream
- 1/3 cup water
- 1teaspoons lemon juice (more if liked)
- 1teaspoons butter (or oil)
Description
Creamy, quick and tasty almost one pan dinner. Don't leave out the lemon, it's essential!
Instruction tip
Sprinkle a little Smokey Paprika if you like, and if I had some capers I would have tossed some in.
Method
Step 1 of 4
Sprinkle salt and pepper on both fillets, both sides, and dust both sides with the flour.
Step 2 of 4
Heat butter (or oil) in a small fry pan and cook the fillets about a minute and a half on each side. Set aside on kitchen paper.
Step 3 of 4
In the same pan cook the mushrooms lightly to colour, about a minute and a half, then add water, cream, herbs and lemon juice. Stir and continue to cook until the sauce is well combined. You can thicken it with some corn flour if you think it needs it but I was happy without it.
Step 4 of 4
Plate up and serve with whatever sides you like. I just microwaved some mini asparagus.
