  • 1 lemon, halved
  • 1 passionfruit, halved, plus 1 wedge of passionfruit for garnish
  • 30milliliter Bickford’s Pineapple & Passionfruit Cordial
  • 30milliliter Cawsey's Sugar Syrup
  • 45milliliter Vickers London Dry Gin
  • crushed ice (to serve)
  • 1/4 cup soda water, chilled

Description

Summertime sips are meant to be light, bright and sparky. This tropical gin fizz ticks all the boxes, and looks like a glass of sunshine to boot.

Method

Step 1 of 3

Juice 1 lemon half. Thinly slice remaining half. Strain half of the passionfruit pulp into a small jug. Discard seeds. Add lemon juice.

Step 2 of 3

Pour juice mixture into a 300ml-capacity tall glass. Add cordial, sugar syrup and gin. Stir.

Step 3 of 3

Add crushed ice and remaining passionfruit pulp, then top up with soda water. Garnish with lemon slices and passionfruit wedge. Serve.
