  • 3 cans Dole Pineapple Slices in Juice
  • 4 limes
  • 1 1/2 cups brown sugar
  • 1/2 cup rum
  • 12 star anise
  • 8kilograms whole leg ham
  • 1packets bay leaves
  • 1 punnet rosemary, to decorate

Description

This show-stopping ham with a tropical glaze creates the ultimate sweet-and-salty flavour explosion. A guaranteed crowd favourite!

Method

Step 1 of 5

Preheat oven to 180°C/160°C fan-forced.

Step 2 of 5

Drain pineapple, reserving juice from 2 cans. Zest and juice 3 limes. Place pineapple juice in a large saucepan over medium-high heat. Add sugar, rum, zest and lime juice and cook, stirring, for 4 minutes or until sugar dissolves. Add 3 star anise and bring to the boil. Boil for 8 minutes or until syrupy.

Meanwhile, using a small sharp knife, cut around ham rind, 8cm from shank end. Starting at the opposite end to shank, run your thumb under the rind to separate it from the fat. Peel back and discard the rind. Wrap shank end in foil, then place ham in a large roasting pan.

Arrange pineapple over ham, securing slices with toothpicks. Spoon a little syrup over ham, then bake, basting with remaining syrup every 15 minutes and arranging remaining star anise on pineapple halfway through cooking, for 1 hour 40 minutes or until pineapple has caramelised.

Remove pan from oven, then discard toothpicks and foil. Slice remaining lime. Transfer ham to serving plate. Decorate with bay leaves and rosemary sprigs. Serve with sliced lime.
