  • 1 cup brown sugar
  • 1 stick cinnamon
  • 2 star anise
  • 3 yellow peaches, diced
  • 4kilograms Bertocchi Gold Half Ham on the Bone
  • 2 sprigs rosemary, to decorate
  • 1 sprig fresh bay leaf, to decorate

If you need a ham as the centrepiece of your next dinner party, look no further than this sweet, spicy peach option, boosted with star anise, cinnamon and thyme.

Method

Step 1 of 3

Preheat oven to 180°C/160°C fan-forced. Line a large roasting pan with baking paper. Stir sugar, cinnamon, star anise and peaches in a small saucepan over low heat until sugar dissolves. Bring to a simmer over medium heat for 15 minutes, stirring occasionally, or until thickened. Strain glaze.

Step 2 of 3

Using a small knife, cut around ham rind, 10cm from shank end. Starting at the opposite end to shank, run your thumb under rind to separate it from the fat. Peel back and discard rind. Place ham in pan and wrap shank end in foil.

Step 3 of 3

Brush ham with of the glaze. Bake for 1 hour, basting every 15 minutes, or until golden. Transfer to a platter and rest for 30 minutes. Wrap shank with muslin cloth and garnish with rosemary and bay leaf. Wrap with twine to secure. Slice to serve.
