- 1/3 cup sweet sherry
- 300milliliter thickened cream, whipped to soft peaks
- 12 sponge finger biscuits
- 500grams double thick custard
- 2packets raspberry flavoured jelly crystals
- 2tablespoons natural almond flakes (to serve)
- 1400grams peach slices in juice, drained (2 jars)

Method
Step 1 of 3
Empty jelly sachets into a large heatproof jug. Add boiling water and stir to dissolve. Stir in cold water. Pour mixture into a tall 2-litre-capacity glass serving dish. Cool slightly then refrigerate for 4-5 hours or until set.
Step 2 of 3
Spoon custard over jelly. Place sherry in a small bowl. Dip biscuits, one at a time, in sherry and push into custard.
Step 3 of 3
Layer peaches and cream on top. Scatter with almonds. Refrigerate until ready to serve.
