- 300grams mixed berries, frozen
- 100grams caster sugar
- 2 1/3 cup water
- 4 sheets gelatine
- 1 2/3 cup custard
- 12 sponge fingers
- 3/4 cup whipped cream
- 1teaspoons vanilla extract
- 4tablespoons icing sugar
- 80grams dark chocolate, grated into shards

Description
A forest fruit based dessert with creamy textures and smooth flavours.
Method
Step 1 of 10
Heat up a large saucepan with the frozen berries, water and caster sugar and bring to the boil.
Step 2 of 10
Allow to simmer for 10 minutes, stirring occasionally. Then mash with a potato masher lightly and simmer for a further 5 minutes and allow to cool.
Step 3 of 10
Place the gelatine leaves into water and allow to soak for 10 minutes.
Step 4 of 10
Once the berries have cooled, mash and sieve into a bowl to remove the skins and seeds.
Step 5 of 10
Place the gelatine leaves into the juice and combine fully and allow to set.
Step 6 of 10
Prepare 4 serving glasses by placing broken sponge fingers at the bottom of each glass.
Step 7 of 10
Pour the juice with the gelatine into each of the glasses also, enough to cover over the biscuits fully and allow to set in the fridge for 30 minutes.
Step 8 of 10
Once the juice has hardened, pour the custard on top of the set juice.
Step 9 of 10
Whip the cream with the vanilla and icing sugar and then place that on top of the custard.
Step 10 of 10
Serve with grated chocolate as a garnish.
