  • 300grams WW jam sponge roll
  • 1/3 cup medium sherry
  • 415grams WW tinned black cherries, chilled
  • 800milliliter thick custard
  • 250grams WW mascarpone
  • 1packets raspberry jelly
  • 2tablespoons almond slivers

Description

A long held family favourite dessert at Christmas and I've added an Italian twist to my version. Simply delicious and you'll be back for seconds!!
Instruction tip
I allowed an hour because I was making my custard and allowed to cool slightly. You could also use Port or Liquore if Sherry isn't your favourite or just omit it altogether. Sherry is our family tradition

Method

Step 1 of 8

Make the jelly the day before according to packet instructions and leave in the fridge and place the tin cherries in fridge too. Today's the day for making the trifle! Gather your ingredients and your favourite large dessert glass dish.

Slice the Jam Sponge Roll and arrange in the dish and drizzle over the sherry.

Firstly I like to make my custard with Nurses Full Cream Custard Powder just like Mum used to do, but you could use a extra thick store bought one if you choose. (This really shortens the process time) Allow this to cool slightly while arranging the Jam Sponge Roll.

Step 4 of 8

Drain the cherries and arrange them over the sponge roll. Mangoes are another delicious fruit to use

Pour the custard over the cherries and allow to cool completely.

Step 6 of 8

Spread the Mascarpone over the custard.

Step 7 of 8

Fork the jelly so it is broken into little crystals and spread on top of the Mascarpone and then top with the almond slivers. Place in the fridge covered till ready to serve.

Step 8 of 8

Serve with a large spoon so you can "dig" down to the bottom to get some of everything.
