  • 50grams mixed mushrooms, washed, drained and finely diced
  • 1teaspoons lemon juice
  • 1/4 cup mayonnaise
  • 1teaspoons parsley, chopped
  • 16 spears asparagus
  • 8 slices Parma ham
  • 2tablespoons olive oil

Description

A deliciously fresh and salty snack with a creamy mushroom dip that really brings the Asparagus to life.

Method

Step 1 of 4

Pre-heat the oven to 180°C/160°C fan-forced. Wrap 2 spears of asparagus in 1 slice of parma ham. Do this for the whoel batch and transfer to a baking dish with the olive oil.

Step 2 of 4

Fry the diced mushrooms on a non stick pan for 5 minutes or until all the liquid has evaporated.

Step 3 of 4

Allow the mushrooms to cool fully before combining them with the other sauce ingredients and allow to set in the fridge.

Step 4 of 4

Bake your asparaus in the oven for 10 minutes and serve with the mushroom mayonnaise.
