- 1kilograms RSPCA-approved chicken drumsticks
- 2 small lemons (save 1 zested and juiced, 1 thinly sliced)
- 2tablespoons cornflour
- 1teaspoons sea salt flakes
- 2teaspoons lemon pepper
- 2tablespoons extra virgin olive oil
- 400grams Woolworths tangy & crunchy coleslaw kit
- 250grams loaf rustic white sourdough, sliced

Description
Bursting with zingy lemon flavours, this tasty one-tray chicken drumstick recipe is a breeze to whip up.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Make 3 shallow cuts on both sides of each drumstick, then place in a large greased roasting pan.
Step 2 of 4
Combine zest, lemon juice, cornflour, salt flakes and lemon pepper in a small bowl. Add to chicken and toss to coat. Stand for 10 minutes to allow flavours to infuse.
Step 3 of 4
Add lemon slices and 1/4 cup water to roasting pan. Bake for 35 minutes or until chicken is golden and cooked through.
Step 4 of 4
Prepare salad kit according to packet instructions. Serve chicken with salad and bread, and drizzled with pan juices.
