Simple Roast Chicken With Easy Vegetables

- 2teaspoons lemon pepper
- 1 broccoli, florets removed
- 1.60kilograms whole chicken
- 800grams frozen oven-roasted potatoes
- 10grams thyme, leaves removed
- 1/2 cup spicy mayonnaise
Method
Step 1 of 4
Preheat oven to 200°C. Using a sharp knife or kitchen scissors, cut along each side of chicken backbone and remove. Flatten chicken and place into a roasting pan, skin-side up.

Combine mayonnaise and half the thyme in a bowl. Spread the mixture under chicken skin. Sprinkle with lemon pepper. Roast for 50 minutes or until golden and cooked through.

Add potatoes to pan around chicken and cook as per packet instructions until heated through.
Step 4 of 4
Meanwhile, cook broccoli in boiling water for 4 minutes or until just tender. Add peas and cook for 2 minutes or until heated through. Drain. Serve chicken and potatoes sprinkled with remaining thyme leaves and vegetables.
