  • 2teaspoons lemon pepper
  • 1 broccoli, florets removed
  • 1.60kilograms whole chicken
  • 800grams frozen oven-roasted potatoes
  • 10grams thyme, leaves removed
  • 1/2 cup spicy mayonnaise

Method

Step 1 of 4

Preheat oven to 200°C. Using a sharp knife or kitchen scissors, cut along each side of chicken backbone and remove. Flatten chicken and place into a roasting pan, skin-side up.

Step 2 of 4

Combine mayonnaise and half the thyme in a bowl. Spread the mixture under chicken skin. Sprinkle with lemon pepper. Roast for 50 minutes or until golden and cooked through.

Step 3 of 4

Add potatoes to pan around chicken and cook as per packet instructions until heated through.

Step 4 of 4

Meanwhile, cook broccoli in boiling water for 4 minutes or until just tender. Add peas and cook for 2 minutes or until heated through. Drain. Serve chicken and potatoes sprinkled with remaining thyme leaves and vegetables.
