- 600grams boneless chicken (thigh or breast or mixture of both)
- 1/2 cup cornflour
- 1 egg, whisked
- 4tablespoons oil (canola, rice bran, olive)
- 60milliliter lemon juice
- 2tablespoons honey
- 2teaspoons garlic, crushed/minced
- 1/4 cup soy sauce
- 3/4 cup chicken stock
- 1tablespoons cornflour (second measure)
- 50milliliter water
- 1teaspoons white sesame seeds
- 1packets microwave long grain white rice (to serve)
- 2tablespoons brown sugar
- 1-2tablespoons flat leaf parsley
- 1teaspoons ginger, minced or finely sliced
Description
Sticky, tangy, easy to make, winner winner chicken dinner.
Method
Step 1 of 7
Preheat oven to 180 degrees Cut chicken into bite-sized pieces and add to a large bowl
Step 2 of 7
Coat chicken in cornflour. Add the egg and mix together. Set aside while you make the lemon sauce.
Step 3 of 7
Add lemon juice, honey, brown sugar, garlic, ginger, soy sauce and chicken stock into a bowl and whisk together.

Heat oil of choice in a large frying pan. Add chicken pieces and fry in batches until crispy on both sides. remove each batch from frypan and put on tray lined with paper towels and put in oven to keep warm, while you cook next batch.

once all chicken is cooked, wipe excess oil from frying pan. Add lemon sauce mixture and simmer for 2 minutes.

mix second measure of cornflour (1 Tbsp) with 50mls water until dissolved then add to the sauce
Step 7 of 7
Once it starts thickening, add the crispy chicken. Coat it in the sticky lemon sauce. pour into a warmed dish and sprinkle over chopped parsley and sesame seeds. Serve hot with the rice.
