- 2-4 chicken breasts (depending on size)
- 200grams mushrooms sliced thinly
- 8 rashers bacon, sliced
- 2 large red onion, sliced thinly
- 60grams butter
- 1 cup sherry
- 8teaspoons plain flour
- 1 cup water
- 4teaspoons beef stock powder
- 1/2 cup cream
- pinch salt
- pinch pepper
- 5milliliter olive oil

Description
Classic dish with a twist.
Method
Step 1 of 3
Slice each chicken fillet into 5 pieces (if large) and brown slightly in olive oil.
Remove from frying pan.
Step 2 of 3
Use butter and sauté onion, mushrooms and bacon for 3-5 minutes, pour in sherry and bring to the boil.
Stir in flour, mix real well.
Remove from heat and stir in water and beef stock powder.
Season with salt and pepper to your liking.
Step 3 of 3
Place chicken back into pan, cover and cook on a low heat for 35 minutes. Turn chicken every 10 minutes.
Just before serving add cream stir in well, cook for a further 5 minutes.
