  • 3 ripe nectarines, halved, destoned
  • 2tablespoons extra virgin olive oil
  • 3teaspoons thyme leaves
  • 1 1/2tablespoons warm honey
  • 80grams soft goat’s cheese
  • 1/3 cup walnuts, roughly chopped

Method

Step 1 of 5

Preheat oven grill to medium-high. Line baking tray with baking paper. Place nectarine, cut-sides up, onto tray. Brush with some honey and season with a little sea salt. Add walnuts to side of tray.

Grill for 3 minutes or until edges of nectarines have browned and walnuts are toasted.

In a medium bowl, mash goat’s cheese with a fork. Add 1 tbs oil and milk and whisk until smooth.

Combine remaining oil and thyme in a small bowl.

Step 5 of 5

Drizzle nectarines with remaining honey, thyme oil and scatter over walnuts. Serve with cheese mixture.
