  • 160grams basil leaves, extra to serve
  • 1 red onion, peeled and cut into wedges
  • 1 chorizo sausage, sliced
  • 6 chicken thigh cutlets, large, skin on and bone in
  • 200grams cherry tomatoes, on the vine
  • 5milliliter extra virgin olive oil, for drizzling
  • 6 slices crusty bread, to serve
  • 4 potatoes, boiled, to serve

Method

Step 1 of 7

Preheat the oven to 200°C fan forced.

Step 2 of 7

Place the garlic, sugar, vinegar, Mutti Passata, Mutti Cherry Tomatoes and basil leaves in a large high sided baking tray. Season with salt and pepper and mix well to combine.

Step 3 of 7

Arrange the red onion, chorizo and chicken thighs on top of the sauce mixture.

Step 4 of 7

Drizzle with olive oil and sprinkle the chicken skin with sea salt flakes.

Step 5 of 7

Bake the dish for 30 minutes.

Step 6 of 7

Add the vine cherry tomatoes and bake for a further 10-15 minutes or until chicken is browned and cooked through.

Step 7 of 7

Serve with crusty bread or boiled potatoes and extra basil leaves.
