  • 1 brown onion, finely diced
  • 4 cloves garlic, thinly sliced
  • 1/2 cup dry white wine (optional)
  • 400grams diced tomatoes
  • 1 cup vegetable stock
  • 1/2 bunch basil, leaves picked
  • 1 sliced sourdough bread, chargrilled, to serve

Cooking tip:
Steam mussels in a wide pot so they cook evenly. If they're stacked high in a pot, the bottom ones will cook faster than those on the top.

Method

Step 1 of 3

Prepare mussels according to packet instructions.

Step 2 of 3

Heat oil in a large saucepan over medium-low heat. Add onion and cook for 8 minutes or until softened, stirring frequently. Add garlic and cook for 3 minutes or until fragrant. Add wine, if using, and simmer for 5 minutes or until liquid has reduced by half. Add tomatoes and stock, and return to a simmer. Simmer for 10 minutes or until reduced slightly.

Add mussels and cook, covered, for 8 minutes or until mussels open and are cooked through. Top with basil and serve with sourdough bread.
