- 50grams butter
- 1/4 cup flat-leaf parsley, chopped
- 1 loaf crusty bread (to serve)
- 4 large French shallots, chopped
- 2kilograms mussels
- 1tablespoons dijon mustard
- 1 1/2 cup pale beer
- 2tablespoons olive oil
- 6 sprig thyme
- 4 cloves garlic, sliced

Rinse the mussels under cold running water. Remove the beards by pulling firmly.
Step 2 of 3
Heat the oil in a large stock pot over medium heat. Add shallot, garlic and thyme, and cook, stirring, for 3 minutes or until shallot is softened.
Step 3 of 3
Pour in beer and bring to a simmer. Add mussels and cover pot. Cook, stirring twice, for 5-10 minutes or until mussels have opened. Transfer mussels to a large serving bowl. Cover to keep warm. Bring pan juices to the boil. Whisk in butter, parsley and mustard. Pour over mussels. Serve with bread.
