- 250grams dried soba noodles
- 3tablespoons sunflower oil
- 1 bunch spring onions, trimmed and sliced
- 2 celery sticks, cut into matchsticks
- 100grams shiitake mushrooms, sliced
- 100grams oyster mushrooms, sliced
- 100grams enoki mushrooms, trimmed of base and separated
- 2 heads pak choi, coarsely shredded
- 2tablespoons sesame seeds (to garnish)
- 6tablespoons tamari sauce
- 1tablespoons lemon juice
- 2teaspoons fresh root ginger, grated
- 2 cloves garlic, crushed
- 1teaspoons lemongrass, chopped
- 1tablespoons caster sugar
- 1/4-1/2teaspoons wasabi paste
- 225grams soya beans
Description
This dish uses cultivated mushrooms that originate from Japan. They are widely available in supermarkets, but chestnut mushrooms can be substituted, if necessary.
Method
Step 1 of 4
Cook the noodles according to the packet instructions. Drain and set aside.
Step 2 of 4
Whisk the tamari sauce, lemon juice, ginger, garlic, lemongrass, sugar, and wasabi paste in a small bowl with 2 tablespoons water and set aside. Boil the soya beans in water for 3 minutes. Drain and set aside.
Step 3 of 4
Heat the oil in a large frying pan or wok. Add the spring onions and celery and stir-fry for 2 minutes. Add all the mushrooms and stir-fry for 3 minutes. Add the pak choi and soya beans and stir-fry for 1 minute.
Step 4 of 4
Add the noodles and the bowl of tamari sauce. Toss until everything is hot through and coated. Spoon into bowls and sprinkle with sesame seeds before serving.
